HYDRATE WITH SUMMER CUCUMBERS

Cucumbers are crisp and refreshing due to their high water content. Enjoy the hot summer days by keeping your body well-hydrated with the help of fresh cucumbers. Doctors often advise you to remain hydrated. They ask you to drink adequate amounts of water that will keep your body healthy. That’s when cucumbers come in – nutritionist reveal that cucumber contain 95% water, making it an excellent source to stay hydrated. Cucumbers provide various nutrients but are low in calories, fat, cholesterol and sodium.

Cucumbers can be stored in refrigerator in sandwich bag for a few days after being cut. Always wash and/or peel cucumbers before use. Slice cucumbers in salads or eat with dips or spreads; can be served or blended with tomatoes and other fruits & vegetables to make a cool salad or add to smoothies. Hydrate your body with a refreshhing glass of cucumber-infused water. Enjoy cucumber in a variety of ways, anytime of the year.

CUCUMBER AND TOMATO SALAD – Serves 4

½ English or seedless cucumber, diced

2 vine-ripe tomatoes, diced                                                             

Handful flat-leaf parsley, chopped

1 tbsp. of red onion, chopped

2 tbsp. red wine vinegar, a couple of splashes

3 tbsp. of extra virgin olive oil

Salt & Pepper to taste

Combine all ingredients in a bowl. Dress with vinegar and oil, salt and pepper, to taste. Best if chilled for a few hours.
